Mascarpone and Seasonal Fruits Pizza

This Mascarpone and Seasonal Fruits Pizza is a lovely twist on traditional toppings, celebrating fresh, seasonal fruits paired with rich, creamy mascarpone.

The base begins with a blind bake using sliced apples, which not only infuse the crust with subtle sweetness but also create a beautiful texture for layering. Baked to perfection in our Ooni Karu 12 oven, the crust is crisp on the outside and tender on the inside. After baking, the apples are removed (a tasty snack in themselves!) to make way for the mascarpone and seasonal fruit toppings.

A generous layer of smooth mascarpone is spread over the warm crust, followed by a vibrant and juicy mix of fresh gooseberries, red currants, and black currants. These seasonal fruits create a delightful balance of sweet, tangy, and tart flavours. A final drizzle of honey ties everything together, adding a touch of natural sweetness, texture, and shine.

Equipment

  • Outdoor Pizza Oven, Pizza Steel, or Stone (if using a home oven)
  • 1 Pizza Peel
  • 1 Tablespoon or "Spoonula" type utensil to spread the mascarpone
  • 1 wooden chopping board or peel for prep and serving

  • 1 pizza dough ball
  • Mascarpone cheese
  • Honey
  • Seasonal fruits: we used gooseberries, red currants, & black currants Of course, feel free to experiment with your favourite fruits
  • Fresh mint

Instructions
 

  • Prepare Dough: Follow any of our dough recipes. You will need to prepare the dough at least 24 hours ahead of time.
  • Prepare Apples for Blind Bake: Slice apples thinly and set aside for the blind bake. These will be removed after baking.
  • Prepare Mascarpone: Allow the mascarpone to come to room temperature so it’s easy to spread. Set aside for post-bake assembly.
  • Prepare Fruits: For the toppings, we used gooseberries, red currants, and black currants. For a rustic look, we left the stems intact, but feel free to prepare the fruits however you prefer by removing stems or cutting them to your liking.
  • Preheat Oven:
    If using an outdoor pizza like an Ooni pizza oven, aim for a temperature of 450-500°C at the center of your pizza stone. Use an infrared thermometer to ensure accuracy. It should take around 25-30 minutes to reach temperature.
    For a home oven, using a pizza steel or stone, place the stone or steel inside the oven and preheat to the highest temperature for at least 30 minutes.
  • Prepare Base: On a lightly floured surface, stretch out the dough by hand according to the steps outlined in our dough recipe. Once you're happy with the shape of the base, lightly dust your pizza peel and transfer the dough onto the peel.
  • Assemble for Blind Bake: Arrange a layer of sliced apples over the pizza base. The apple slices will be removed after baking but will create a lovely texture and add a subtle sweetness to the crust (plus, they taste delicious!).
  • Blind Bake Your Pizza:
    If you're using an outdoor pizza oven, launch the pizza into the oven and bake for 60-90 seconds. Keep an eye on the pie and rotate every 10-15 seconds to ensure even cooking and to avoid burning.
    For a home oven with a pizza steel or stone, the bake time should be around 7-10 minutes, or until the crust is golden and the apples are lightly caramelized.
  • Assemble Post-Bake Toppings: Once the pizza is baked, carefully remove the apple slices. Spread a generous layer of mascarpone over the warm crust. Arrange the gooseberries, red currants, and black currants on top. Drizzle with honey to add a touch of sweetness. Garnish with fresh mint.
