Zucchini, Chanterelle Mushrooms, & Nduja Pizza
Today’s pizza pairs the delicate sweetness of zucchini with the rich, umami-packed depth of chanterelle mushrooms and the fiery kick of nduja, creating a beautifully balanced and flavourful pie.
Chanterelle mushrooms, known for their golden colour and subtly peppery, earthy flavour, bring a meaty texture and a luxurious depth to the pizza. Nduja, a spicy, spreadable Calabrian sausage, melts into the toppings as it bakes, infusing the pizza with smoky heat and an intense, savoury richness. Thinly sliced zucchini, mild and slightly sweet, offers a fresh contrast, balancing the boldness of the nduja and mushrooms.
A layer of fresh mozzarella provides a creamy, melty foundation that ties all the ingredients together. Dried oregano enhances the aromatic profile, while a drizzle of extra virgin olive oil (EVOO) before baking ensures a smooth, well-rounded flavour profile.

Ingredients
- 1 pizza dough ball
- Fresh mozzarella cheese
- Nduja
- Chanterelle mushrooms
- Zucchini
- Dried oregano
- Fresh thyme
- Extra virgin olive oil
- Butter
Instructions

- Prepare Cheese: Place your fresh mozzarella in a container or bowl with a paper towel at the bottom to allow some of the water to drain. Tear into medium-sized pieces. Set aside.
- Prepare Chanterelle Mushrooms: Clean the chanterelle mushrooms thoroughly to remove any dirt or debris. Sauté the mushrooms in butter over medium heat with a sprig of thyme until tender and fragrant. Set aside to cool.
- Prepare Zucchini: Slice the zucchini into thin ribbons using a vegetable peeler. Set aside.
- Preheat Oven:If using an outdoor pizza like an Ooni pizza oven, aim for a temperature of 450-500°C at the center of your pizza stone. Use an infrared thermometer to ensure accuracy. It should take around 25-30 minutes to reach temperature.For a home oven, using a pizza steel or stone, place the stone or steel inside the oven and preheat to the highest temperature for at least 30 minutes.
- Prepare Base: On a lightly floured surface, stretch out the dough by hand according to the steps outlined in our dough recipe. Once you're happy with the shape of the base, lightly dust your pizza peel and transfer the dough onto the peel.
- Assemble Pizza: Sprinkle a layer of fresh mozzarella cheese evenly across the pizza, leaving a small gap between each piece for even melting. Arrange the sautéed chanterelle mushrooms over the cheese, followed by the zucchini ribbons. Next, place dollops of Nduja in small portions across the pizza. Finish with a drizzle of extra virgin olive oil and a sprinkle of oregano.
- Bake Your Pizza:If you're using an outdoor pizza oven, launch the pizza into the oven and bake for 60-90 seconds. Keep an eye on the pie and rotate every 10-15 seconds to ensure even cooking and to avoid burning.For a home oven with a pizza steel or stone, the bake time should be around 7-10 minutes.
- Serving: Once the pizza is done, remove it from the oven and place it on a serving board. Drizzle with a little more extra virgin olive oil, and you’re ready to enjoy your delicious homemade Nduja, Chanterelle Mushrooms, & Zucchini Pizza
